Quinoa Salad with Fresh Veggies and Lemon Dressing

Ingredients:

1 cup cooked quinoa.

1 cucumber, diced.

1 bell pepper, diced.

1/2 cup cherry tomatoes, halved.

1/4 cup red onion, finely chopped.

2 tablespoons olive oil.

Juice of 1 lemon.

Salt and pepper to taste.

Instructions:

1. Combine cooked quinoa, vegetables, and onion in a large bowl.

2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

3. Pour dressing over the quinoa mixture and toss to coat.

4. Chill for 20 minutes before serving.

Ingredients:

1 banana, sliced

1/4 cup mixed berries

1 tablespoon honey or maple syrup

1/4 teaspoon cinnamon.

Instructions:
